from USSR in ice nano-crystallisation for long-time
storage of food. The result of these developments
is the Acoustic freezing process, during
which the structure of cells is preserved.

SHOCK AND ACOUSTIC FREEZING
The Acoustic Freezing process is parallel, while the conventional
shock freezing process is sequential.
